The philosophy that guides the work in the cellar is respect for the environment in which they live and work, in a continuous dialogue with new trends and cultivation techniques. Since 2013, the winery has been working the land and grapes organically, and since 2015 it has embraced the dictates of \u003cstrong\u003ebiodynamic agriculture\u003c\/strong\u003e, favouring the practice of green manure, spontaneous grassing in favour of soil fertility.\u003c\/p\u003e\r\n\u003cp\u003eThe vineyards at Oasi Bianco di Aquila del Torre are carefully tended by expert pruners who ensure that the vines receive the necessary nourishment so that they can best express their intrinsic territorial characteristics. The soil is composed of a stratification of marly stone and sandstone with the presence of clay and the altitude is between 175 and 300 metres above sea level. The orientation is south\/south-west, with constant sunshine between the rows throughout the year, which guarantees full ripening of the grapes. Harvesting is manual; in the cellar, spontaneous fermentation takes place with \u003cstrong\u003eindigenous yeasts\u003c\/strong\u003e in French oak barrels. It matures 12 months on the lees.\u003c\/p\u003e\r\n\u003cp\u003eThe colour of Oasi Bianco di Aquila del Torre is golden yellow with brilliant and intense reflections.
